Summer Strawberry Salad

Asked to bring a dish to pass at our family Christmas party last night, I decided to make this fun summer strawberry salad. I have to give props to my mother and sister-in-law for this because they were the first ones to make it.

Everything is so cold during the winter months, not to mention covered in white, so I thought this would add a bit of color and warmth to the evening. It was a hit as usual and just about all of it was eaten. So here I share with you our new family summer strawberry salad recipe.


What you will need:
1 package of fresh spinach – Baby leaves work best
1 red onion
1 package of fresh strawberries – Make sure they are plump and dark red
1/3 cup red wine vinegar
1/3 cup sugar
1/3 cup oil – either vegetable or olive (I use olive oil)

Salad

First, rinse off the spinach and strawberries in COLD water and place into a bowl. Make sure the bowl is large enough because everything will need to be tossed afterwards (Sorry, the good picture of the spinach has disappeared on me so I had to take a new one with it in the container, not the bowl *sad face*).   


 

Next, cut the strawberries into thin slices, from top to bottom.



Add them to the spinach and then chop the red onion into small pieces. Be sure to use the purple part because you want the colors to “pop” in the salad.


Add the onion to the spinach and strawberries and now you’re ready to make the dressing.

Dressing
 NOTE: Do not add to salad until you are ready to eat it.

You will need - oil, red wine vinegar, and sugar


Mix in a bowl or container with a whisk until sugar is dissolved.


If you are ready to eat this now, go ahead and add the dressing, toss salad, and enjoy. If taking it along somewhere, put the dressing in a container with a tight fitting lid to shake well before adding.

Food Chain Challenged!

In today’s news, the food chain as we know it has been challenged. Something must be said for those small 6-pound diluted tortoise shell cats overtaking the home and sleeping quarters of 80-pound labs! Either she’s one tough kitty…or she’s got somethin’ on him (conniving little bugger!). She’s been known to stand to the side and snicker while he gets caught standing on the table watching out the window for the truck to come out of the garage. I swear it’s her knocking over the garbage when I’m gone just to see him get in trouble! (Again, conniving little bugger.)

This WAS Avalon’s bed…I’m not so sure I would like to read her mind ‘bout now!

Styrofoam Christmas Tree Craft

Christmas in my house has become a little bland over the last few years. It has become bland for a number of reasons but I vow this year will be the last year. I have recruited my family into making some crafts (or attempted to recruit them) and so far the only one I have been successful with is Madison. But since she is my  little buddy, she will do anything that involves spending time with me.

This project turned out pretty cute considering how cheap and easy it was. Most of the stuff I already had for my scrapbooking kit but I did have to make a couple cheap purchases. I do not have a picture of everything because I ended up making one change at the very, very end.

Here is what you will need:

Styrofoam cones – Since I was making Christmas trees, I bought the green ones but you can get white and paint them if you desire. I bought these from Michael’s and they were 50% off. Almost everything is half off right now so head there and stock up while everything is cheap!!

Sewing pins with the pearl heads – I used bright multi-colored ones from Wal-Mart. Michael’s has them but they only had very large packs of plain yellow. Boring. So I expensed a little extra and bought brightly colored pins.

Glitter spray – This is for fabrics but when it dries on the foam, it leaves a nice light sparkle. I applied 2 thicker coats.

Glitter Poms   - For the tree topper (Madison used them on her tree but it is not displayed here)

Wooden dowels – I used the dowels to hold the trees up while the spray glitter was drying and proved to be very helpful while spinning to put the pins in. You can also cut this shorter and paint brown for the tree trunk.

Styrofoam block – This was left over from a school project for Madison so I used it to prop the trees up.

Cotton balls or fake snow

Hot glue gun or super glue always works, too

Thread ­– Color of your choice to be used as garland





Okay, there seems to be a lot of stuff needed here but there really isn’t and this is a very easy project.

First, trim the top of the cone with a razor knife and use sandpaper to shape it to resemble a tree top, then take the cone and push a wooden dowel into the bottom for the trunk or to use as a prop. Spray with the glitter spray. I used 2 thick coats but you can use as many as you would like. Don’t worry, the tree won’t look like it dripping with glue for long. It will dry with a nice sparkle but make sure you let it dry before applying another coat. Oh! And another bit of advice: SPRAY OVER A PLASTIC TABLECLOTH OR BOARD! The glitter gets e-v-e-r-y-w-h-e-r-e!! Please take it from me, you do not get a feeling of vertigo when the glitter is rolling around your eyeball, so please be careful!



This is when I rounded out my tree tops but I recommend doing it before glittering. It’s okay if you forget because the glitter does not rub off on your hands if you have to shave it down afterwards. Just remember to spray some more glitter on it if you do it after.

Next you push all your pins into the cone for the ornaments or lights on the tree. I did not follow a specific pattern or even have one in mind. I just tried to keep one color away from another. You most certainly could use one color and string it around like lights and then use the other colors for ornaments if you would like. After I pushed all my pins in, I stretched some cotton balls out and glued them to the bottom for snow. When I was finished and was looking at it, it seemed to be missing something so I took a piece of thread that matched the color scheme and strung it around like garland.




This was easy to do and Madison sure had a lot of fun doing it. It’s quick, easy, cheap, and a GREAT way to spend time with your loved ones. 


Whatever you do this Holiday season, make sure you tell your friends and family just how much they mean to you, and remember, even the smallest of gestures (such as letting your kids decorate the tree no matter how clustered the decorations are) goes a long way.

Coffee is not just for drinkin'!

Coffee! Coffeee! Coffeeeeeee!

Wow, do I ever LOVE coffee! (Bet you couldn’t tell that from the name of this blog ;) ). Not only is coffee just one heck of an awesome beverage but it is versatile, too. There are many ways you can drink coffee (such as from a cup or a mug or a thermos. You can even drink it hot OR cold) and many things you can do with the grounds afterwards.  Sipping a steamy cup of creamy coffee comforts you when you’re sad, warms you when cold, and is the center of laughter with your friends. When the pot has been brewed and the coffee has been enjoyed, why do we just throw away the grounds and not use the coffee to its fullest potential?

Here are some other uses for such a fantastic little piece of heaven.

Indoors
1.       Baking – I have yet to try this but it is going to happen soon! Instead of using water for your cookies or brownies (I use milk instead of water anyway), use the same amount of brewed coffee.

  

1.     2.   Marinade or Rub – Marinate your steak for about 30 minutes in brewed coffee or use the grounds as a rub for the meat. 


1.         3.  Odors – I’ve always been taught to have a box of Baking Soda in the refrigerator to absorb all those yucky smells. They all (well, except for the lunch meat that’s buried in the very back) smell good on their own, but when you add them ALL together? Gross. So, nix the age-old tradition of baking soda and try a small container of coffee grounds. 


4. Body Scrub – The grounds exfoliate the skin and leave it feeling fresh, soft, and rejuvenated. I’ve done this from time to time but make sure you use a screen (or something like cheese cloth) to catch the grounds. Otherwise they will clog your drain. I’ve heard of a number of spas and salons using this technique to help fight cellulite and “waken” up your sleepy skin. Why buy ALL this stuff??

  

Outdoors

5.  Fertilizer – Have acid-loving plants such as blueberry plants, hydrangeas, rhododendrons, or creeping phlox’s? If you do, this can help add acid to the soil and allowing your garden to flourish and make your neighbors green with envy. Save your coffee grounds (perhaps store them in a nifty container you have left from your last can) and sprinkle them on the soil around your garden.


6. Oh, wait a minute. What’s this? Something for the men (and women, of course)FISHING! – Apparently worms like coffee as much as we do. All ya gotta do is drop those creepy lil buggers into a container with coffee grounds and then hit the lake. Be careful though. Have you ever tried to bait a hook with a worm? They are crazy wiggly anyway but now they have a caffeine buzz!  



(Let’s hope your worms don’t make this face when you take them out! Yikes.)

Thursday's Thoughts

                My apologies for missing yesterday but I was caring for my brother who was having some health problems. But, I am back and I have a ton of ideas to share! I have a Christmas tree craft I will share with you tomorrow!


Today however is “Thursday's Thoughts” and I’ve got a photo to share with you to help you remember that you can do anything. After more than a year of being off work, I finally got the call for the perfect interview. I was nervous and worried, and immediately my mind went negative, so I decided to doodle on the dry erase board in my office, and added a little "pick me up" consisting of 3 little words. Those 3 little words are quite powerful when added together because low and behold, I got the job! =)

Keep in mind that whatever it is you want to do, you can do it, just have to keep thinking positively. I want each of you to do me a favor: When you find that you do not believe in yourself, write this down somewhere where you will see it every day, look in the mirror and tell yourself, “You got this!” Trust me, it sounds corny but it works. If you don’t believe in yourself how can you ask anybody else to?

It must be love!

Tonight we are experimenting with a new recipe. Well, I should really say that my husband is experimenting. I was mad at him yesterday so he cooked, cleaned up, and took care of the darn zoo we have in this house, while I … well, frankly I did nothing. It was a point that I needed him to see how hard it is and I am not talking to hear my own voice.

The good that came out of it was I haven’t had to cook in 2 days and he has learned how much fun cooking really is! He’s great at it and I hope he does it more often. Of course I would be only telling half-truths if I said it was only because the food was good; I have to admit that I enjoyed working on switching the Christmas trees around and playing with the kids while he was bangin’ and clangin’ in the kitchen. This could be a very harmonious relationship! =)

From the Mouths of Babes ...

Dad was just about to graduate from college and we were sitting at the dinner table. Madison looks at me and says in a funky combination of a whisper and what sounded to be like someone squeezing her nose and vocal chords, “So let’s not tell Dad what we got him for graduation.” I responded in the same (or my best rendition) voice, “Well, we will keep it a secret because I don’t even know what we got him yet.” Prying his eyes off the television just long enough to catch me in the act of sounding utterly ridiculous, he asks what we are talking about. Her response:  “Oh, it’s nothing. We were just discussing global warming.”
