Summer Strawberry Salad

Asked to bring a dish to pass at our family Christmas party last night, I decided to make this fun summer strawberry salad. I have to give props to my mother and sister-in-law for this because they were the first ones to make it.

Everything is so cold during the winter months, not to mention covered in white, so I thought this would add a bit of color and warmth to the evening. It was a hit as usual and just about all of it was eaten. So here I share with you our new family summer strawberry salad recipe.


What you will need:
1 package of fresh spinach – Baby leaves work best
1 red onion
1 package of fresh strawberries – Make sure they are plump and dark red
1/3 cup red wine vinegar
1/3 cup sugar
1/3 cup oil – either vegetable or olive (I use olive oil)

Salad

First, rinse off the spinach and strawberries in COLD water and place into a bowl. Make sure the bowl is large enough because everything will need to be tossed afterwards (Sorry, the good picture of the spinach has disappeared on me so I had to take a new one with it in the container, not the bowl *sad face*).   


 

Next, cut the strawberries into thin slices, from top to bottom.



Add them to the spinach and then chop the red onion into small pieces. Be sure to use the purple part because you want the colors to “pop” in the salad.


Add the onion to the spinach and strawberries and now you’re ready to make the dressing.

Dressing
 NOTE: Do not add to salad until you are ready to eat it.

You will need - oil, red wine vinegar, and sugar


Mix in a bowl or container with a whisk until sugar is dissolved.


If you are ready to eat this now, go ahead and add the dressing, toss salad, and enjoy. If taking it along somewhere, put the dressing in a container with a tight fitting lid to shake well before adding.
